Nothing Bundt



I'm obsessed with these little cakes! They are called Nothing Bundt Cakes. They are so tasty and have just the right amount of icing and let me tell you the icing is AMAZING!!

I had them a baby shower this weekend and they had the bundtini's! (about the size of a cupcake)
So cute and so good!!

Highly recommend trying this place!

The red velvet was my favorite, yes that does mean I ate two at the shower!

Chirstmas Truffles

I feel like I have been blogging lately about holiday things after they happen! I have not been prepared this year for Christmas or Thanksgiving, they came and went too fast!

Before we left for Nashville I was able to make some treats for the fam. My good friend, Ash told me about these awesome red velvet truffles she was making. I had to try them!



So here it goes...

Ingredients:

1 box red velvet cake mix
1 can cream cheese icing
sprinkles
4 packs Bakers White Chocolate


Bake cake according to regular directions on the box.

As soon as the cake comes out of the oven, crumble the whole thing into a bowl. Don't leave any big pieces, smash the whole thing up. Then dump the whole can of cream cheese icing into the crumbled cake and mix together extremely well. Put the mix into the fridge for an hour or so, until it is cool throughout.

After it is cool, roll the cake mix into balls. It should make about 40 balls. After you have rolled them all, put them in the freezer for at least an hour. (it is ok to even wait until the next day if you need to wait, an hour is just the minimum time)

Melt 4 squares at a time of the white chocolate in a plastic bowl and roll the cake balls in the chocolate, using a spoon to roll them around. Sprinkle immediately and place on wax paper. (the chocolate hardens fast)After they are all rolled in chocolate and sprinkled, they are done and ready to be stored in the refrigerator.

So tasty!

Tailgate Time

I can't believe the title of this post! It's almost here!! Our first football game is next Saturday, next Saturday??!! Can you believe it!

I am excited, but also really nervous! We are not going to be the best and I'm okay with that, I'm just worried about ole AK. Not sure how he is going to hold up! After all, he did change his name as a child from Andrew to Andy when Andy Kelly was the quarterback at UT.

We have several home games this year and I'm already racking my brain on what to make for the tailgate. I am always open for suggestions for quick and easy food. It's hard making great stuff in a hotel room.

N'awlins - Part 2

The conference went really well in NOLA. Here is a quick recap....


The conference was held at the Hotel Monteleone, the location was awesome and the rooms were nice!


We kicked off the conference with a reception, on the 52nd floor of the offices of Jones Walker. The view was amazing!


In my free time, I had to stop and get char grilled oysters from Acme!! Yum!




I also walked through Jackson Square and did some people watching!


The conference dinner/reception was held at Latrobe's on Royal and featured Deacon John and the Ivories! They were amazing! The band is in the second episode of the the new mini series on HBO called Treme, which is a show that takes place in NOLA.

Overall, everyone had a great time! I think I only gained a couple pounds from all of the oysters, po boys, shrimp and grits, boudin balls, and the list goes on...

Oh Baby Baby...


I got back to Columbus today and it feels great to be home! I have been laying around on the couch, cooked a pizza for dinner, and I'm about to watch 48 hours (one of my favorite shows!!) However, I am SOOOO ready to see AK, he's on a bachelor party and doesn't get back until Monday!
It's been a long three weeks, but has gone by so fast!
Nashville was really great! Since I was there for a little while I got to see a lot of friends and do a lot of things (got a pedicure, oh how I do wish we had a signature nails in C-bus, did some shopping and ate lots!!) Also, while I was there my college roommates and I threw our first baby shower for our other roommate! We had so much fun planning and throwing it!

N'awlins



I haven't been doing so good with my blog since I have been in Nashville. I have been a bit crazy and tomorrow I am leaving for New Orleans for a conference I have been planning for what seems like forever! But it's here tomorrow and I think I'm ready!! I am heading back to Columbus on Saturday and ready to get back to AK!

I'll catch up with all the fun Nashville festivities (my fav new restaurant, shopping, and a good friend's shower) once I get back and are calm again....for a moment. Have a great week!

Holiday Party Appetizers

It's that time of year for Holiday parties! Whether your attending one or throwing one, I wanted to share my two favorite appetizers for parties.

The first is sausage stuffed mushrooms. My friend Vannie taught me this recipe a couple of years ago. So good! Make sure you make a lot because I promise you they will be gone!!

Stuffed Mushrooms
1 lb. bulk sausage, brown and drain
2-3 packages of fresh mushrooms (chop stems, reserve caps)
salt and pepper to taste
8 oz. cream cheese, softened

Brown sausage and drain. Add sausage and pepper to taste. Add softened cream cheese to mixture over low heat and stir until all mixed together. Remove from heat and fill mushroom caps. Broil on a cookie sheet 5-10 minutes.

My second favorite -



Baked Brie
1 tube of refrigerated crescent dinner rolls
1 round or wedge of Brie cheese (do not remove rind)
Raspberry Jam, or other sweet jam
Carmel (like the ice cream topping)


Preheat oven to 350 degrees F. On a stick-free cookie sheet, lay out the puff pastry or the crescent rolls flat; put brie round or wedge on top. Spread jam on brie, fold dough over top, cutting off excess dough. Bake at 350ยบ for 25-30 minutes, pastry should be golden brown. Drizzle Carmel syrup on top. Let cool for 10 minutes before serving.

Serve with crackers.
